Khikhvi is a local less-spread standardized variety of vine providing high-quality wine. Based on agro-biological characterization – the vine originates from the local area of the Akhmeta district.
The wine is made from 100% of the Khikhvi rare vine variety of hand-picked grape, grown in the Bio-certified vineyard at the terroir of Alaverdi Monastery in Akhmeta municipality of Kakheti region. The Terroir itself is a part of the two PDOs, Kakheti and Akhmeta. It is made with conventional Kakhetian rule in Qvevri (clay jug) wine-making, involving the fermentation with the use of natural yeast, and without any additive. The grape is fermented, stored, and aged in Qvevri for 3 months after being in contact with its Chacha (Pomace ) for six months. Estate bottled Natural Amber dry wine is rich with phenol compounds, tannins and is characterized by high antioxidant properties due to the Ancient Georgian traditional Qvevri wine-making method. Skin contact, six-month-macerated, and aged in Qvevri Artisan natural dry wine is bottled unfiltered.
